Honey Suckle Cordial

Summer is almost over. The 1st September appeared out of nowhere with bad weather to boot that said 'winter is a-comming'. This recipe is literally made of summer and will have you re-opening the sealed bottle for a whiff of sunshine. The colour of the cordial depends on the colour of the flowers you use so maybe make some of both colours, quickly, before the season is over.




Sent the flowers to make cordial for a shoot with these talented ladies I had to go foraging for extra and ended up with more pinky rose flowers which then turned the cordial into a sunset pink haze tinged with gold. Similar to the elderflower cordial I did a couple of months ago but inspired by this amazing blog, it is so easy and made me so happy. There are some things that are so simple but so beautiful and this my friends, is one of them.





RECIPE:

4 cups of honeysuckle flowers
600g of sugar
24fl oz of boiling water
1 tsp citric acid
1 lemon sliced finely

Slice the lemon and put into a bucket/big pot with the honeysuckle flowers. Sprinkle the sugar over and pour over measured boiling water. This makes about 800mls.

Easy peasy.

Courgette Burgers

I love these little crispy pancake type burgers. They burst and pop with flavour in your mouth, are easy to make (although a bit of a process) and reheat/keep warm in the oven super duper well.

It is another recipe inspired by Yotom Otolenghi and I'm going to say that mine is easier, less time consuming and just as good as his (originally leek fritters).
Bold I know but I have to go in guns blazing.




My recipe is also great for gluten free diets. Through trial and error (aren't you glad I'm doing it for you) I've found that a cup of mixed buckwheat and quinoa flour works exactly the same as the quantity of flour Yotom uses in his. Yippeeee.

It's summer and the glut of courgettes was in. This uses up a good amount and you could use more just double the batter mixture and hey presto. Easy.

Courgettes or zucchinis depending on which side of the pond you come from are part of the summer squash family. Lower in sugar, carbs and Vit A than it's winter counterparts it is still a great alkaliser and supposed to help with inflammation according to the Chinese. Cooked per 100g it's only 16 calories..not bad my friends, not bad.




I love this spice. Can you guess what it is? I'm sure all you clever clots did and of course, why wouldn't you! Cumin. Fragrant and utterly reminiscent of India even though, it's native to Eastern Mediterranean. I always buy whole seeds and spices if I can. The flavours hold better for longer and will have more of an impact than powder. Who knew that such a tiny seed helps with the secretion of digestive juices, stimulate circulation and relieve pain and cramping. Wonder seed if I do say so myself.




I've already spoken about quinoa here so I'm going to focus on Buckwheat. Whilst reading up about this grain I was happily shocked to find that it is the best stabiliser of blood sugar out of all the grains. As someone who suffers with insulin resistance this is great! I have a little issue with the smell of cooked buckwheat but when I mixed it with quinoa flour I didn't even notice it. This grain is a power house of goodness containing all 8 essential amino acids. Lore says that buckwheat inhibits melanin and that's why you'll find that people living in warmer climes tend to eat more. I'm not sure about this but if you know more, tell me!

However, if you suffer from skin allergies or problems try not to eat to much as it prevents cells from cleansing themselves. It is however gluten free so great for celiacs and when roasted becomes  one of the few alkalinising grains.




RECIPE:
4 courgettes washed, topped, tailed and grated
1 cup of quinoa and buckwheat flour combined
1 large egg
⅔  cup of milk (I use goats)
big bunch of parsley/coriander
2 small chillies
garlic cloves
2 tbsp cumin
olive oil 
salt and pepper

In a frying pan, grate the courgettes, add the cumin seeds and cook so they release their water. Strain them a little but don't get stressed out about this as you don't want to lose the cumin seeds. Leave to cool.
In a blender whizz the parsley/coriander, chillies and garlic cloves. Meanwhile mix the egg, flour and milk. Add the whizzed up mixture to the batter and stir. Once the courgette is cooled add to the batter. Make sure that it's well stirred. Season.

In a frying pan heat some oil. Make sure it's really hot before you add the mixture and start cooking. Once it is hot to trot, place spoonfuls of the mixture and spread out a little. Cook till golden then turn over and repeat.

I normally cook mine 3 hrs ahead. When the time comes I heat in 100C oven for about 15/20mins. Makes 30.

Serve with a refreshing yoghurt and cucumber dip or a fresh salad.

My Second Smoking

Last week, I was lucky enough to do work experience in the kitchen with the crew at Fenns Quay restaurant in Cork city. What a great team of people who care that what comes out of their kitchen is as local as it can be, good quality and beautifully presented. The head chef Kate is a power house of ideas and vision. She is a great cook, teacher and now my friend.




We all know how my obsession with smoking is gaining in strength and at Fenns Quay they do some cool things with Earl Grey, a blow torch and salmon. So guess who volunteered their services to do this  weeks?? You got it, yours truly.

Here's the process.



Line a tray with salt and dill (or herb of your choice). Lay your pieces of salmon down. Sprinkle with tea of your choice, they use Early Grey.






Cover with more salt and herbs. Leave over night and then wash off the salt.
Pop the salmon back in a tray and wrap it up ¾ with cling film, not touching the salmon. In a little dish put some more Earl Grey tea leaves and get out the blow torch.






Once you get a good colour from the tea leaves, wrap the cling film around the gap as quick as poss. Leave for about half an hour and repeat. The more you repeat, the stronger the taste!







And voila, smoked Early Grey Salmon. Yum.

Rain rain go away

Crikey's o'reily it's been raining here non stop for 4 whole days…everything is damp and wet and smelly and nothing dries. The dog hides under the bed when there's thunder. I hide under my covers when there's thunder….yes, yes. Laugh all you want at my fear of rain and thunder!

I need some sun and colour and something to make me giggle. Your best tips for feeling better??

Caminata

At the beginning of December lots of things start happening in this part of the world. The first and second of December villagers do the Caminata of the Virgin of the Guadalupe. This is basically where the the churches congregation remove the statue of the Virgin and walk it around the village for others to see. Its a reminder of who they worship and give thanks too.
I was invited to a caminata in my local village. It was lovely to see that sense of community is still alive. The kids got dressed up, the men cooked the food and then the women served it up.There was dancing and singing, old wives tales, gossip and a really lovely day…

Woodland walks

And who said feeling ill is and excuse not to do anything? Today was forest day as it turned out and I couldn't help feeling a little like Goldilocks walking through the woods. Living in the tropics I had completely forgotten about that un-mistakable Fir tree smell and the the fantastic way collecting fir cones makes you feel like your hunting for bounty.
Not only the majestic Fir trees on show but there was all sorts of fabuloso stuff around, snails and slugs with their trails and amazing mushrooms....if only I knew which were safe and which were not!

It's all about the seaside.

I love love love anything beach. The sand in your pants, the ice cream cones, the drift wood, shells and the sense of freedom that comes with the waves crashing on one side, the breeze blowing through you hair and like today, the sun.
It was, glorious. Just beautiful. I've only been back 3days in the UK so obviously not that acclimatized hence the 3 layers,boots and jeans but it was divine.

We had breakfast on the beach, people were walking their dogs, the sun was shining, the surfers were out and I really appreciated being in the UK. So, thanks to my new camera (LX5) which I love, love to death as in do you take this camera for better or worse love. And my new app snapseed I got a litle carried away but enjoy...hope you had a great sunny day!

Yep, it's official. I've given up.

It's official, I've given up as doing my Sunday colour. I'm sorry but hey ho. With my Internet connection and traveling I'm just breaking promises and let's face it, who wants that.

Right, now that's done I want to next say that I have officially flown back to Europe (starting with the UK) and I'm horrified at what's going on all over England. Mindless vandalism and thuggery, it's really distressing that the future generations of this awesome country are going to be known not for it's distinguished behavior, honesty and dignity but for violence, crime and horridness. I have no sympathy for these rioters, and this is purely my opinion without meaning to offend anyone. But, let's face it your not doing anyone least of all yourselves a favor. A friend of mine told me over the phone yesterday 'speaking to a rioter he told me that he's looting so he can get his taxes back'. Really???
My feelings go out to those of us who are standing up for their streets, standing up against these rioters and are showing them that what they are doing is NOT right. If I was down south I hope that I would have the guts to stand up too.

Ok, now onto some hopefully nicer things yet keeping with the theme of creepiness here are some of the amazing bugs I have found in the last couple of days....
