Kitchen envy

As I slave away in my kitchen this week, I got to thinking about what I would want my ideal kitchen to look like and how it should function...

Veggie food

So, without even thinking about it I mainly eat veggie...but. There are those times for me where a big steak is heaven. A little slice of magical heaven...it fills you up, gives you energy among other things!

But this week I've been trying my luck out with a vegetarian lasagne. Now I am not a huge fan of lasagne as it is, so trying to make it now seems a little crazy but, make it I did. Twice!

The first time was a lentil and courgette lasagne and this one (photos) is a chickpea, aubergine and chile poblano...has a lovely kick to it!

If anyone has any other good combos for a veggie lasagne please share!


I like making my aubergines stripey, the skin is always so tough and yet I quite like the bitter taste it gives...plus the effect is nice!


The base for the tomato sauce, now I didn´t do a bechamel...bad girl I am. But sometimes you just don´t have the time! I didn´t have any onions so I used spring onions...I didn´t have enough of one kind of tomatoes so I added these deliciously sweet yellow tomatoes...

mmmm...chili poblano, chickpeas and homemade ricotta cheese!


The finished produce...with a chunk out of it. I had to make sure it was ok didn´t I??

Belize, the island of Belikin


Having not long come back from a Christmas full of mince pies and turkey in England I found myself taking off to Belize. Yes, I've been here before and yes, there is always something different to see!

The turquoise cool waters lapping against the crystal white sand was enough to send anyone to heaven and believe me, there were moments where I was heaven bound.

The island having been mangroves is now such a tourist destination one could compare it to Cancun, without cars and a lot smaller. Yes, it's still the carribbean, yes it still has some heritage but it's been invaded. Pure and simple. I wonder if any country ever learns that what made somewhere so special should be kept to maintain it's specialty...or is that too whimsical?

It's the little things...

Yes, when one is heartbroken, it's the little things that make a difference. A smile from a stranger, a hug from a friend or a piece of chocolate. I've been lucky enough this week to have been looked after by my adopted Aunt and Uncle. Knowing that I don´t have to come back to an empty house  has been a godsend. So…for all of you who have known heartbreak, I send you this. I know it's hard but.
